One of Australia's oldest wineries, producing long-lasting wine using traditional methods.
Tahbilk is a family-run winery on Nagambie Lake that has been in business since 1860. Nagambie Lake is located in central Victoria, 120km north of Melbourne, and is one of Australia's leading producers of premium grapes. It is also home to some of the oldest agricultural fields in Australia. Premium Shiraz, Cabernet Sauvignon, and Marsanne are made from these old vines, but the oldest vineyard is Shiraz, which was planted in 1860, before phylloxera became popular, and the wine made from grapes from that vineyard is It is called ``1860 Vines Shiraz.'' Harvesting usually takes place over a period of 5 to 6 weeks starting in early March. Tahbilk Label uses all grapes from its own vineyards. Only 20% of total production is exported to countries such as the UK and the US. A brand loved by Australians.
Unique production area worldwide
Nagambie Lake is an area rich in water despite being inland, as the Australian Aborigines called it "Tabilk Tabilk" (a place with many holes filled with water). The reason the climate is milder and cooler than one would normally imagine is because it is influenced by the many lakes and swamps connected to the Goulburn River, and it is said that this is the only production area in Australia and about six in the world. . The reddish-brown sandy loam soil, which is rich in iron oxides, also gives the grapes their distinctive flavor.
Original equipment still in use
In Tahbilk, the first vines were planted in 1860, and at the same time a brewery and cellar were built. All construction materials had to be procured on site, so the walls were made with mud and stones brought in from nearby riverbanks, as well as handmade bricks dried in the sun at the winery, and the beams and columns were made of red gum and iron bark. I cut out the hard eucalyptus with an ax. Expansion continued, and in 1882 the tower, pictured on the label, was built. The first floor of the building was used for brewing until the 1940s, but at the end of the 19th century it suffered from a series of misfortunes, including an outbreak of phylloxera and the death of the owner, and the brewery was abandoned for a while. In the 1930s, the current owners, the Publik family, rebuilt Tahbilk and it continues to this day. The underground cellars, including the large storage barrels, are still in use.
Living tradition and long-lived wine
Alistair Pubrick studied brewing at Roseworthy School in South Australia and became Tahbilk's brewer in 1979, but the red wine brewing method has not changed from the traditional method. Fermented in open oak vats, the red wine is aged for 18 months in old oak barrels over 100 years old in underground cellars at a year-round temperature of 15–16°C. During this time, the lees is removed twice, and after bottling, the wine is aged for an additional 12-18 months before being shipped. Premium wine is aged for an additional four years before being released. Tahbilk wines are incredibly long-lived wines that develop complexity with age.
Unique variety Marsanne
Now considered one of the rarest varieties in the world, Marsanne originally originated in the northern Rhône and Hermitage, but is now grown only in France, Australia, the United States, and Switzerland. Tahbilk's Marsanne began in the 1860s when cut branches of the White Hermitage were obtained from St. Hubert in Victoria, and the current Marsanne dates back to 1927, making it one of the oldest in the world. It also ranks first in the world in terms of production volume.
Aromas of fresh lemon and lime stand out, with aromatic scents of apple blossom and jasmine. Pear and guava fruits intertwine in a well-balanced manner with minerals and sharp acidity. After several years of aging in the bottle, aromas of marmalade and honey emerge, increasing complexity.
