Château de Lascaux is a family-run winery located in Pic-Saint-Loup, which is said to be one of the top producing areas in Languedoc. Jean Benoît Cavallier took over the 13-generation domaine in 1984 after completing his agricultural engineering studies. In 1990, the vineyard and cellar were reorganized and the winery was relaunched as an independent winery, Château de Lascaux. The farm used to be 20 hectares, but has now expanded to about 85 hectares while practicing organic farming. In 2009, we received Ecosale certification, and since 2014 we have been further working on biodynamics.

Pic Saint-Loup, which was elevated to an independent AOC in 2016, is close to both the Mediterranean Sea and the mountains, and is at a high altitude, so grapes grow slowly due to the large temperature difference between day and night. This unique cool microclimate gives Lascaux wines a freshness and finesse not found in other Languedoc wines. There are three different terroirs in the field, which are made up of intricate geological formations such as marl and limestone, and the optimal varieties selected by Jean Benoit are planted in each terroir. Cultivating the fields, short pruning, precise palissage (fixing grape branches to wire), and minimal treatments. They say that working in the fields is the essence of their winemaking. In addition, the fields are surrounded by 300 hectares of forest and garrigue, blending into a rich natural environment with an amazingly diverse ecosystem, and are spread out to protect them from the cold winds. Given this environment, it was only natural that Lascaux turned to organic farming.

Winemaking is a job that requires care, rigor and intuition. It is important that the grapes are completely destemmed after harvesting. We pay close attention to the extraction process and soak the fruit skins for a long time. Thorough temperature control and daily follow-up must be carried out. Aged for over a year, whether in tanks or barrels. After bottling, the wines, which exhibit the clean essence, aromas and freshness for which Lascaux is famous, are cellared for weeks or years before being released. Château de Lascaux has received high praise from specialized magazines such as Wine Spectator and Wine Advocate.
