Dominio de Vivey was established in 2001 in Ribeira Sacra (DO approved in 1997), a production area that has received the most attention in recent years, in the inland region of Galicia. It was founded by Javier Dominguez, a local businessman, with the aim of revitalizing the local wine industry. Charismatic brewers Sarah Perse and Rene Barbier Jr., who have expanded beyond Priorat for the first time since its establishment, have participated as brewing consultants. We cultivate indigenous grapes, mainly Mencia, and practice elegant and complex wine making based on the concept of ``making wine only with materials that have existed in nature since ancient times.''

Ribeira Sacra is one of the most scenic areas in Spain, with fields spread out on steep slopes along the river. The 45 hectare field in the Quiroga-Vibey subdivision is located at an altitude of 300 to 700 meters, on a west-facing slope influenced by the continental climate, and the soil is acidic and clay loam with little organic matter, with a base of granite and slate. It consists of a topsoil layer. We grow old trees that are 80 to 100 years old, as well as indigenous varieties such as Mencia, which has an average age of over 50 years, and Bransejao, Moulerton, Codello, and Albanillo. Multiple clones of the same variety are grown, and new plots are planted to maintain clonal diversity in order to create complexity in blended wines.

There are no machines in Dominio de Vibey's steep terraced fields, so everything is done by hand. We do not use any herbicides or chemical fertilizers to grow grapes, and practice organic farming using only naturally occurring sulfur. In order to purely express the terroir, we also use a gravity system for winemaking. For fermentation, we do not use stainless steel tanks, but instead use large wooden barrels and some egg-shaped cement tanks (700L), and fermentation is carried out for each variety and section. We do not use new barrels for aging; when we purchase new barrels, we first fill them with other wines and let them acclimate before using them. Dominio de Vivey, which has brought revitalization to the entire Ribeira Sacra, is a winery that never forgets its original spirit and moves forward with expert technology.

Lalama means "fertile earth". A smooth and elegant bottle with aromas of cassis and various herbs, and rich fruit flavors that spread mellowly in the mouth.
