Henri Latour is a domaine based in Auxay-Duress. We produce a robust red wine with a hint of minerality from a vineyard located in the valley at the southwestern tip of Monterrey. In Haute-Côtes, the temperature is 2 to 3 degrees lower than in Beaune, so wines with strong acidity can be produced, but Henri Latour makes clear wines that take full advantage of the characteristics of this region. This is a domaine where you can enjoy pure Pinot Noir with vintage characteristics.
Lyre style (koto-shaped V-shaped style) is used for pruning. In this method, the main branches are arranged in a T-shape with a spacing of about 1m, and several wires are spread vertically in a V-shape to attract them. Research by INRA (French National Institute of Agriculture) since 1960 has proven that it prevents the propagation of botrytis and pests that parasitize branches, and maximizes the leaf area of new shoots, resulting in high-quality grapes. It is also said that it can be harvested. However, due to the cost involved, this method is rarely used in Burgundy. The domaine also focuses on organic farming methods and strives to maximize the potential of the soil.
All grapes are harvested by hand and brewed slowly at low temperatures to fully extract the ingredients. From 2002, we have reduced Pigeage from twice a day to once a day, and have kept the cellar at 14℃, aiming to produce purer, cleaner wine. Domaine Henri Latour loves the traditions and wines of the land and continues to produce excellent wines that are exemplary in the Oaksay valley.
Clear wine making that takes full advantage of the characteristics of this region. A wine with a good balance of acidity and fruit.
