Domaine Ott's history as a winery begins in 1896 when it was founded by Marcel Ott, an agriculturist from Alsace. As a result of searching for soil suitable for winemaking, they acquired Château de Sel in 1912, Le Clos Mireille in 1935, and Château Romasin in 1956. We produce a wide variety of wines from each of our three wineries. Ott's name has an asterisk next to it, and it is said that this asterisk was added at Marcel Ott's request, in the hope that it would brighten Ott's path. Their wines are on-listed at many luxury hotels and restaurants in Mediterranean resort areas such as Monaco and Cannes, and their impressively curved bottles line the lunchtime table, adding a touch of glamour.

Domaine Otto★ is a pioneering winery that has been using natural farming methods based on its own philosophy for over 100 years. The vineyards are carefully maintained, and insects that cause powdery mildew on the vines are removed directly using Bordeaux liquid or by hand. In addition, the surface soil is tilled every three weeks using a tiller, and only naturally derived materials such as compost and seaweed are used as fertilizer. To protect the fruit from the summer sun, prune the thick leaves leaving just enough leaves to improve ventilation. Around the fields, lavender and olive trees, typical of Provence, are planted between the winery and the fields, allowing the strong wind called Mistral, which is unique to southern France, to blow through. In this way, not only the blessed oceanic climate, but also careful daily care have made it organic and chemical-free.

The important points in wine making at Domaine Otto★ are ``no pressing'' and ``keeping the wine at a low temperature.'' When squeezing, carefully crush the fruit and gently extract the juice. The extracted juice is immediately transferred to a cooling tank installed next to it. Furthermore, we boldly utilize the latest technology, such as using equipment for dairy products to create stainless steel tanks that maintain low temperatures. The wine is aged in French oak barrels, but because the environment inside the oak is perfect for the sedimentation of the wine during aging, we chose to use wooden barrels, especially large 5,000L barrels. The wines created for each cuvée are tasted for the first time in November for the white wines and in February for the rosés to determine the blend for the year. After that, it is further aged in oak, giving it a rich volume and a subtle oak aroma until it is ready for bottling.

Fresh aromas of grapefruit, apricot, and orange are layered with honey-like sweetness and hints of spice. An elegant and extremely sophisticated rosé wine with the rounded body of Mourvèdre and the spiciness of Grenache.
