The “Sauvignon Blanc Magician” who made Loire wine known to the world
Pascal Jolivet is a natural winery that boasts one of the most talented producers in the Loire. Owner Pascal Jolivet was born as the eldest son of Jacques Jolivet, who ran a wine sales company in the Pouilly-Fumé area. He bought a Loire winery in 1982 and founded Pascal Jolivet. Shortly after its first release, in 1995, their signature wine, Sancerre, received a high rating of 90 points from Wine Spectator magazine, and Pouilly-Fumé received a high rating of 89 points. In addition, its name quickly became known as a representative maker of the Loire region, including being sold in Michelin-starred restaurants from an early stage.
With the concept of ``as natural and unaltered as possible,'' without using any pesticides, harvesting by hand, using a gravity system, and using natural yeast, we cultivate the uniqueness of the terroir with a single variety called Sauvignon Blanc. He is known as the ``Sauvignon Blanc Magician'' due to his ability to create a variety of wines that highlight the ``sauvignon blanc''.
Two different personalities born from the same soil
Sancerre and Pouilly-Fumé are where Pascal Jolivet mainly produces wine. Pouilly-Fumé is on the right bank of the Loire River, and Sancerre is on the left bank. It is made up of three types of soil.
In Sancerre, the three soil elements are clearly separated without mixing, resulting in a wine that directly expresses the characteristics of each soil. In addition, the temperature is slightly lower throughout the year than in Pouilly-Fumé, so the fresh citrus aroma stands out. It goes well with dishes using raw fish such as sashimi and carpaccio.
On the other hand, Pouilly-Fumé is located downstream, and the three soil elements are easily mixed together due to the rising water of the river, resulting in a wine with a complex flavor. It also has a more complex, smoky minerality, influenced by Ice Age soils. It has the citrus aroma unique to Sauvignon Blanc, but the rich minerality and thick body derived from the Silex soil go well with cooked dishes such as sautéed white fish and tempura.
The great appeal of Sancerre and Pouilly-Fumé is that even though they are planted with the same variety and have the same soil, there are huge differences between them. At Pascal Jolivet, we are fascinated by the potential of this land and create wines that express the terroir.
The constant challenge of winemaking that takes advantage of nature
At Pascal Jolivet, we practice grape cultivation in accordance with the laws of nature, with the concept of ``as natural as possible and without modification''. By using natural ingredients such as sulfur solution to prevent pests and diseases such as powdery mildew, it is possible to maximize the fruit flavor and aroma and create wines that highlight the individuality of each wine. Masu. Harvesting is mostly done by hand, and the grapes for the top cuvées are sorted in the vineyard.
To respect the individuality of each vineyard, once the grapes are delivered to the winery, they are sorted into sections. The gravity system is used for winemaking, and the entire process from harvesting grapes to finishing wine is created so that it flows from top to bottom according to gravity, so there is no stress on the grapes and the process is natural. It is designed to be finished in such a way. After the grapes are pressed, they are placed in temperature-controlled tanks to ferment. While other wineries typically use sulfites to speed up fermentation, Pascal Jolivet uses the natural yeast found on the grape skins. For this reason, while normal fermentation takes 1 to 2 weeks to complete, it takes 2 to 3 months, but this allows the acids to dissolve more slowly, creating a mellow and elegant wine. After fermentation, the wine is allowed to come into contact with the wine without lees, allowing the flavor of the wine to settle in, resulting in a deeper, more natural taste.
Pascal Jolivet's wines, which are made with such respect for nature, have a style that can be perfectly described as natural, pure, and elegant. Sauvignon Blanc's characteristic ``acid'' and the terroir's unique ``minerals'' and ``fruit flavors'' are fully extracted and harmonize beautifully without being overpowering.
