ボーヌの1級畑を7つも所有 ボーヌを知るうえで欠かせない造り手 アルベール・モロは1820年にネゴシアンとして創設されたが、1890年に7haのブドウ畑を購入。以降、ネゴシアンとドメーヌの2足の草鞋を履いてきた。アルベール・モロの孫にあたるギィ・モロとフランソワーズ・ショパンの兄妹が経営に当たっていたが、1980年代半ばにギィが病気に倒れ、フランソワーズはネゴシアン・ビジネスの廃業を決意。ドメーヌ経営に集中した。その彼女も引退の時を迎え、直系の子供がいないことから、パリで生まれモンペリエで農学を修めた、甥のジョフロワ・ショパン・ド・ジャンヴリにドメーヌを託すに至った。 現在、ドメーヌの規模は8ha。サヴィニー・レ・ボーヌ1級ヴェルジュレスにモノポールのクロ・ド・ラ・バタイエールを所有する以外はすべてボーヌの1級畑。トゥーロン、グレーヴ、トゥサン、ブレッサンド、サン・ヴィーニュ、マルコネ、そして2001年に加わったエーグロと7つものクリマが揃う。2008年からは村名ポマールのメタイヤージュを始めた。エーグロの4分の1が白のほかはすべて赤である。ドメーヌでは2009年からビオロジック栽培を実施。唯一、マルコネの畑だけがトラクターのアクセスの関係からビオロジック栽培が難しかったが、小型のトラクターを2011年に導入し、このクリマもビオロジックが可能になった。 赤ワインの醸造は、完全除梗。4、5日の低温マセレーションを経てアルコール発酵を行う。以前は木桶を用いていたが、2005年からステンレスタンクに変わっている。トータルで20日間のキュヴェゾンの間、発酵の前半はピジャージュを行い、後半はルモンタージュにより抽出。その後、18ヶ月間の樽熟成となるが、以前は50%に達していた新樽率が近年徐々にその比率を落とし、2009年以降は3分の1となっている。瓶詰めまで澱引きはなし。これはワイン中の炭酸ガスで酸化を防ぎ、亜硫酸の添加を避けるためである。 かつては飲み頃になるまで年月を要する頑なな印象の強かったモロのワインだが、ジョフロワの時代になって洗練度を身に付け、とくに近年の出来は磨きがかかっている。ボーヌの1級畑がズラリと揃うことから、このアペラシオンの特徴を学ぶには最適のドメーヌと言えるだろう。 クロ・デ・ムーシュの北に隣接する、ボーヌ1級のエグロは、クロ・デ・ムーシュがそうであるように、赤も白も良質のワインが生み出される。これはピノ・ノワールから造られる赤の方で、赤い果実のピュアな風味と繊細なタッチの味わいが楽しめる。 色 タイプ 赤／フルボディ／辛口 品種 ピノ・ノワール100% 容量 750ml 産地 フランス ブルゴーニュ／ボーヌ !こちらの商品はお取り寄せ商品となります 平日10時までのご注文分は翌営業日、それ以降および土日祝日のご注文分は翌々営業日の出荷となります。ご注文の際はあらかじめご了承くださいませ。
