The domaine originally belonged to his grandparents, and Denis was born in Belgium. He came to visit her grandparents' house during school holidays and became interested in vineyards, and has been making wine since 1981, when he was 18 years old.

What is noteworthy about this domaine is the age of the vines. The village name Gevrey-Chambertin has an average age of 80 years, 1st grade Corvaux is over 90 years old, and special grade Charme Chambertin is over 100 years old. This age of vines is the source of wines that are full of concentrated flavor and have a precise structure.

In brewing, 100% destemming is followed by low-temperature maceration for 6 days at a temperature of 12 to 15 degrees. After that, alcoholic fermentation takes place for two weeks, at a slightly lower temperature of up to 25 degrees Celsius. In recent years, the brewing process has been reduced from twice a day to once a day, and remontage is performed once at the end of fermentation. By suppressing excessive extraction, the sake does not become hard, making it easy to drink even at a young age. While Denis Bachelet's wine has a strong quality, it is not harsh, which must be due to the not-too-high fermentation temperature and careful brewing.

The barrel aging rate was 25% for the village name Gevrey-Chambertin, and 30% for both the first grade Corvaux and the special grade Charme Chambertin, which was a relatively low percentage for a domaine in Gevrey, but since 2013, some new barrels have been aged. increased to 50% in Gevrey and 100% in Charmes-Chambertin. The aging period is 16 to 18 months. On the other hand, it is interesting that some new barrels are used for Aligoté, which is made by barrel fermentation and barrel aging. Aligote packs a solid punch.

Côtes de Nuits Villages comes from a section of the village of Brochon on the north side of Gevrey-Chambertin, and compared to wines from south of Prémeaux, it has a more solid structure and can be aged for a long time.
